Aims and Scope

This IJMS section is about molecular sciences of foods and drinks having a medicinal effect on human health. Molecular pharmacology of isolated natural products and synthetic organic compounds is also considered. Certain small amounts of natural products in food,  mainly in phytonutrients, and beverage, etc., such as phenolics, carotenoids, vitamins, sterols, may have biological properties/bioactivities (antioxidant, antimicrobial, anticancer effects). All papers will be peer reviewed as other papers of IJMS. We publish only scientific studies including well controlled in vitro studies, animal models, epidemiological studies and/or clinical studies, and correlation of chemical composition and bioactivity.

Chemopreventives: Carveol (a natural terpenoid alcohol, a potential antiangiogen), S-Allyl cysteine (a potentional cholesterol lowering agent); pharmacology studies.
